Memorial Day Special

Hi there!

For the holiday weekend, I wanted to have a grill-fest. I planned on grilling all three days, but only got out yesterday and today. The weather was beautiful, a little cool, but warm, truly spring-like.

During the week I got the new grate in the mail, and picked up more charcoal. What a difference with the stainless steel grates. This was probably my best grill yet. Everything went so smoothly and the food cooked almost exactly how I envisioned.

There was very little smoke during the cook, and minimal charring. It’s overwhelming to think about all the ways grilling food can turn it carcinogenic. All the details of how this can happen have always been on my mind. So I am happy that I have improved.

Even though I still don’t have a place to light my chimney starter, I came up with a trick. I lit half a chimney’s worth of large pieces of charcoal, got them halfway frosted, dumped them in the basket to finish off and start heating the grill, and simultaneously lit a whole batch of charcoal next to the basket. When everything was frosted, I put everything in a pile in the basket. Then I put on the grate, covered with the lid, and let everything finish heating. This powered me through a whole batch of food with ample heat!

I had the bottom vent about three-quarters open and the top vent halfway open.
